VEGGIE-LICIOUS CHALLENGE!

Are you ready for a challenge that’ll have you eating MORE instead of less!? Well, I’ve got you covered!

It’s going to be a colorful and delicious challenge.That’s right. Every day this week, I want you to eat your veggies…. And we’re shooting for 3 cups of veggies every day!

According to the CDC, most of us eat less than HALF the recommended amount of vegetables each day!

That’s a real shame because veggies not only taste amazing, but they can help you lose weight and reduce your risk of heart disease and other ailments while adding more fiber and other amazing nutrients and antioxidants to your diet.

Let’s get creative and have some fun with this challenge…. because eating your veggies should be something you enjoy and look forward to! Here are a few ideas:

Replace your normal starchy carb (rice, pasta, bread, etc.) with some roasted root vegetables (like carrots, parsnips, beets, butternut squash, etc!)
⦁ Top your proteins with some sauteed veggies and onions
⦁ Add spinach or kale to your smoothie.
⦁ Salsa! Did you know a half-cup equals a full serving of veggies? Yum!
⦁ Experiment with spices – boring steamed veggies get old FAST! 
⦁ Tired of salad? Try making a “wilted” or warm salad. Heat coconut or olive oil in a pan, and stir-fry your normal salad ingredients with your favorite spice blends. Finish it off with a splash of apple cider or balsamic vinegar. Delicious!
